I used the Tropical Traditions Organic Coconut Flour in 1 recipe so far for a coconut orange cake. It was good, but a bit dense. I got this thinking I could use it just like wheat flour. I tried half and half for pancakes... After adding 8 eggs and arrowroot powder they sort of stuck together :( After all my work to try to make them turn out, the finished product had no hint of coconut flavor, but did taste a bit like eating sawdust must taste. So buy with caution and have recipes in hand.
