It's very sweet, and tastes like a mix of coconut and maple syrup with a tinge of chocolate. Musky things, basically. This is an excellent thickener/sweetener for raw dishes, and can be doled out as needed thanks to the zippable bag. My only problem is that, unlike the last bag of this I purchased, the powder was rather bitter and took some getting used to - the company probably shouldn't just harvest mesquite bark out-of-season, as that and staleness are the biggest causes of bitterness in barks.
