Customer Reviews of Yogourmet Fresh Cheese, Buttermilk & Sourcream Starter (Pack of 3)Customer Review: Used it all the time until it went AWOL. ???? Summary: 5 Stars
Does anyone know what happened to this product? We can't be the only people on earth missing this product and searching all over for it and waiting what seems like forever for it's return. Maybe Yogourmet just had a bad batch and is starting over but please I so hope they come back again with this. We don't like the Keifer drink at all. And we've had such great results with this starter.
If we are looking for it so are others. I've found nothing through google on why it's gone but it's gone even searching for it on the net it's gone. BRING IT BACK Yogourmet PLEASE.
For those interested making your own buttermilk is so easy and so delicious and great for buttermilk recipes such as waffles/muffins/pound or bundt cakes pancakes etc. OMG Good stuff and better than boughten buttermilk that is no longer cultured or worse uses horrid thickeners that leave it non palitable. So I don't recommend buying buttermilk at the super market and using it as a start it's not reliable. Also sometimes you can find cultured buttermilk without additives but like so many if you live in the inner rural areas of the USA not on the populated coastal areas etc....just try to find any. These packets were our back up. Milk here on occasion has some contaminates like antibiotic feed or supplements to the animals we figure because once in a while milk will taste awful and sure enough the buttermilk suddenly has issues and doesn't set up right. So we are careful to buy milk they say does not have anything done to the feed or supplements to the animals especially no antibiotics.
We make half a gallon every other day. We take a 8 cup glass mixing cup/bowl and heat 6 cups of milk in the microwave for 8 minutes then let set for 10 minutes and heat another 4 minutes. (Other microwaves might have a variation on the time here.) Then we remove the pyrex bowl from the microwave oven and allow to cool completely. Remove the skim on top of the milk once it has cooled and pour in two cups of buttermilk as our starter from our on going batch in fridge. Mix well and cover with lid that has come with the bowl or a plate if you don't have one that came with a cover lid. Let this ferment for 12-20 hours and pour into the pitcher in the fridge. We have two pitchers so can pour all into a clean one every few days to avoid contamination from dried or sour milk getting into it as yes it's thickness clings to spout and dries out and becomes crudy. So we keep a close eye on this and it helps prevent a lot of problems with it going bad due to contaminations. Also we make sure we use clean and sterile items and stainless wisks etc. that do not have places that can hold possible contamination. Ok now and again the buttermilk does go bad or needs to be restarted and so we need to have this starter on hand. Follow same instructions above but use 8 cups of milk and pour in two packets of starter at the cooling stage instead of the 2 cups of buttermilk from the fridge. This takes a good 17-24 hours to work. When you lift the lid to see how it's doing....you want to see a clear smooth shiny and semi solid surface. If you shake it...sort of like pudding/jello combined. Not runny and liquid. The source of milk matters as does brand up here. Some brands or 2% seems to be less smooth and solid and a bit more liquid. We like whole milk but you can make it with 2% even skim I'm told. We do make 2% but usually not less. But for us this system works well. We get two tall glasses of 16 ounces of buttermilk a day out of the gallon size pitcher along with the 2 cups to maintain the next starter every other day. If you use less or use more you might need to adjust your technique and amount of milk and starter you use. We figure we could make the buttermilk with less starter but this process seems to work well for us and on occasion we do tweek it slightly different but most of the time we follow this system and recipe.
We are out of this starter and are really upset...I've been looking for a source now for over 6 months and discovered it's was gone then...at first I just thought it would be back as the company continues to supply the yogurt starters which I also use but am not as fond of. (I do get good results from using both plain yogurt 100% cultured and Activia products from the store and really like them better. I really enjoy Activia plus one of it's liquid drinks and one yogurt like product. But then the local store quit carrying the plain vanilla and only sold the fruit flavored liquids and the fiber added cereal type yogurt which was terrible tasting and textured. So went back to Yogourmets yogurt starters too. I usually keep several boxes in the freezer on hand all the time.
BRING IT BACK YOGOURMET if you are listening...or if you are a vendor/middleman of this product...tell them you want to sell it again.
