I live on the coast of NC where shrimping is being severely regulated, so when I know my favorite source is coming in with a good
catch, I get out the vacuum kit and go to work. Thirty pounds of shrimp can be divided into freezable lots of many sizes, and we
have a goodly supply for ourselves and company throughout the winter. The vacuum method is so much better than freezing the shrimp
in regular freezer bags with water as I used to do because there's no freezer burn and the shrimp are tender and taste fresh. The
vacuum method makes refrigerated foods last longer, especially cheeses, and also protects steaks and other meats from freezer burn.
The Ziploc method is well worth the extra cost of additional bags because of less spoilage loss and more room in the fridge and freezer.
